ZUCCHINI PANCAKES | QUICK, HEALTHY & TODDLER APPROVED


Today, I'm going to share with you D's ultimate favourite lunch recipe with you guys so you can try and see if your toddler (or yourself) enjoy these too! If you're doing the grown-ups version of it, you might want to add some salt and chilli in the mix, as toddlers are on a strict no salt mode for the first years of their lives so obviously I've left the salt out. But yeah, if this recipe says there's no salt, it's because of that. I'm not saying you cannot use salt. Got it? Good, let's get to the recipe.


Ingredients:
- 1 zucchini
- grated cheese
- egg
- breadcrumbs
- pepper to taste

For frying:
- butter

The first thing you want to do is to grate the zucchini. Yes, the whole zucchini. Then you're going to want to press all the liquids out of the grated zucchini. I usually use a piece of fabric to just put them all in and press them to get everything away. Here's the funny thing, zucchinis are the weirdest things on Earth. They gather more liquid themselves all the time and as we want them to be as dry as possible, we need to act fast when mixing the rest of the ingredients into that grated zucchini.

When you've mixed all your ingredients, heat the pan and melt some butter on it (so your pancakes won't stick to the pan), add small pieces, around one tablespoon-sized piece of your "dough" to that pan and fry them on both sides until they're golden brown-ish. Then you're good to go! They should be eaten right away, so make sure you'll make these just the amount you're eating. We don't want extra food waste, right?

  1. Oh my goodness, those look so good! And what a great way to use zucchinis (which are in-season and in abundance at this time of year where I'm at). I LOVE potato pancakes but I've never thought to try zucchini pancakes. :)
