TOMATO SOUP WITH MOZZARELLA


Tomato soup would now be my first choice when it comes to soups, as I'm allergic to tomatoes or something. Eating them makes me uncomfortable. Anyhow, J enjoys so that's why I'm occasionally trying some variations about the basic tomato soup.


Ingredients:
- 1 onion
- 4 garlic cloves
- 2 carrots
- 400g tomato purée
- 2 dl water
- 1/2 dl olive oil
- salt & pepper
- 1 tablespoon balsamic sauce
- fresh basil
- mozzarella


How to roll with it? 
1. Dice the onions and garlic & shred peeled carrots.
2. Fry onions, garlic and carrots in olive oil in the pan.
3. Add tomato purée and water. Poach it for a while
and season with balsamic sauce, salt and pepper.
4. Use a hand blender to make the soup smooth.
5. Pour your soup into the bowl, add some shredded
mozzarella, put basil on the top and you're good
to go!

  2. This recipe looks amazing. I'm really into making my soups at the moment now that the cold weather has kicked in. I am for sure going to try this recipe soon!
