ZUCCHINI LASAGNA


I did this tasty zucchini lasagna couple of months ago for the very first time and since that it has taken a frequent place to our monthly menu. J absolutely loved it and even my mum said that "hey kid, you can actually cook!" I guess that was a compliment & I'm going to take it that way haha. She has never said anything like that to me before.

ZUCCHINI LASAGNA

Ingredients: 
- 400g minced meat
- 2 garlic cloves
- 1 onion
- 1 bouillon cube
- 400g tomato purée
- 1 box cherry tomatoes
- salt & pepper for seasoning
- olive oil for frying
- 200g unflavoured cream cheese
- 2 zucchinis
- 2dl shredded cheese

1. Dice the onion & garlic. Sweat them in oil until they've gotten soft and add split cherry tomatoes.
2. Add mince meat and cook until it's fully cooked. Add tomato purée, bouillon cube, and seasoning. Poach it until the sauce is thick and most of the liquids have disappeared.
3. Cut the zucchinis in a lengthwise direction in 0,5cm thick slices.
4. Add some sauce to the lasagna pan, then zucchini, then sauce and then zucchini again. You know, like making lasagna but with a zucchini slices instead of pasta. Layering! That was the word I was looking for.
5. Add some cream cheese and shredded cheese on top.
6. Cook in the oven at 200°C as long as the zucchini has gotten soft & all the cheese has melted.

  1. Um, YUM! I think I'm going to have to make a mini lasagna for myself. I've always been a fan of zucchini in lasagna - it just sucks that it's so expensive in New Zealand! :( I'm housesitting and I'm actually alone for three weeks, so I'm turning it into a time for me to become a chef! I mean, I have to eat something, right?

  4. Looks delicious. Kudos to you for always preparing fresh, home-made meals. I'm all about that myself. I think too many people eat frozen food or dine outside where you can't really tell what's the quality of produce that they're using.

  5. How clever! I've made a lasagna with tortilla wraps before (and pulled chicken) and that was tasty if different, but this also sounds super delicious! I'll give this a try tonight :)

  6. I'm Italian so lasagna is is definitely part of my meals and I love it! I've never tried this version but it looks delicious so I'll be sure to try and cook it next time.
    I can recommend trying the pesto lasagna with prosciutto, it's fantastic!

  9. This seriously looks so delicious. Do you sweat the zucchini before your bake (some ppl salt slightly to pull out excess moisture before cooking). These photos have me feeling so hungry. I can't eat at this hour lol
