CHANTERELLE SOUP


I absolutely love chanterelles. I love their smell and I love cooking stuff from them but I really don't enjoy eating them and this is where my husband comes to the picture. This soup is like a once in a year kind of a thing I make & hubby seems to like it. Maybe it's the once in a year thing or maybe he actually likes the soup? Just kidding, he loves chanterelles.

Ingredients:

- 5dl chanterelles
- 1 tablespoon butter
- 1/2 onion
- 1 garlic glove
- 3dl water
- 1 tablespoon flour
- 1dl whipped cream
- black pepper for seasoning


1. Dice the onion & the garlic and sweat them in butter in a frying pan. Add chanterelles and poach them as long as all the liquid has disappeared.
2. Add flour, water and cream to the pan.
3. Mix the soup with a hand mixer and enjoy! You can season with some black pepper and salt if needed.

  1. Yum! I love chanterelles and we always make a creamy side sauce or risotto with them - I'll definitely give this soup a go as well, sounds delicious!

  7. I saw this pic on IG and it looked delicious. I don't know how easily I can find chanterelles in the US without paying a great deal for them, but if I do, I'll be sure to try this recipe!

  10. Oh Yum! I love chanterelles. My mom used to cook soups and sauces with them. Probably I should go to a local market places to shop some and try your recipe. I'm sure me and my fiancee would love it! :)

  15. I've never consciously been told I'm eating a meal that has mushrooms in it..chanterelle or otherwise...but this looks really good..I won't mind having this at all
