PASTA WITH COLD SMOKED SALMON

So yeah, we've been trying this new thing. Including fish to our weekly eats. I'm having some serious baby steps with this because I don't eat fish. I hate the smell and I absolutely hate the taste. Then again, I've got my husband and well - there's soon a baby who won't be that much of a baby anymore and will eat you know, food at some point, so fish is kind of a good thing to include in the table sometimes. I don't want them to miss out on things I really don't enjoy. So, I decided that few times a month, I'm trying to cook something from fish. A couple of days ago, I decided that I'd make a pasta with cold smoked salmon and I survived. Gosh, I survived. 


PASTA WITH COLD SMOKED SALMON
(serves four) 

INGREDIENTS: 

- 350g pasta
- 1 onion
- 1 garlic nail
- 2 tablespoons of olive oil
- 200g cream cheese
- 1dl crème fraîche
- 75g fresh spinach
- 250g cold smoked salmon
- 1 lemon peel & juice
- salt & pepper
- parmesan cheese

HOW TO ROLL WITH IT? 

1. Dice the onion & garlic. Sweat them in the oil for a little while. 
2. Add spinach to the pan, fry them as long as the spinach gets softer and water starts to disappear. Add grated lemon peel and season the mix with salt and pepper. 
3. Add cream cheese & crème fraîche, season with lemon juice - carefully. Poach for a while. 
4. Cook the pasta al dente, pour the water away and then add the sauce from the pan to the pasta. 
5. Add sliced cold smoked salmon and finish the dish with some parmesan cheese. 


This was surprisingly easy to make when all I did with the fish was took it out of the package and placed it on the pasta. Gosh, why do I hate fish so much? 
J, on the other hand, seemed to enjoy this a lot - so we shall give it another try next month. Or you know, some day.

  9. This looks absolutely amazing and you actually combined 2 of my favorite ingredients; pasta and parmesan! I like salmon sometimes but not much, I think I'd combine the pasta and parmesan with grilled salmon! :)

  10. Looks yummy! I love salmon. Tuna and scrimps are also very tasty. Maybe you could try eating some fish in a good seafood restaurant? Maybe that would help you to like it. Especially if you visit Mediterranean area some day you should try all those seafood restaurants with super fresh seafood! :)
