JACKED SWEET POTATO & STRAWBERRY NICECREAM | GUEST POST BY MARTA

I love vegetarian food and here are two of my favourite options. I decided to add a 
dessert as well for all those sweet tooth out there  like me. They both are easy, 
simple and don’t need a lot of ingredients. 


Jacked Sweet Potato

1 medium sized potato
2 cherry tomatoes
half of avocado
Spring onion
2 medium sized mushrooms
Feta cheese
1 tea spoon of olive oil
Salt 

A twist on the traditional and loved jacket potato. In the UK it’s one of the most 
popular lunch or dinner options, but I opted for a sweet potato as it is so much 
better for you. 

Heat up oven on Fan setting 200o C. Cover the sweet potato in a bit of olive oil 
and salt. Put it in the oven for 45 minutes. 

While the potato is cooking it’s way to deliciousness, chop up feta cheese, 
mushrooms, tomatoes and spring onions. 

After 45 minutes of cooking, take the sweet potato out cut it in the middle and 
places all the chopped up ingredients, except the spring onions in. Put it in the 
oven for 10-15 minutes. 

When the potato is ready simply sprinkle spring onions over the freshly sweet 
potato and serve it with the sauce of your choice. I went for Soured Cream with chives. 


Strawberry Nicecream

5 medium frozen strawberries
2 fresh strawberries
1 medium frozen banana
Half cup of Almond Milk
Dash of vanilla extract
Tbl spoon of Chia seeds

This is literally the best receipt I’ve discovered in the past 2 months. Be sure 
to freeze all the fruits, so when you blend them out, you get that ice cream 
consistency. 

Blend together all the ingredients and serve with fresh strawberries. 
Simple as that!

I love jacket potatoes as well and I will try your recipe -it sounds yummy - but without the avocado (avocado tastes like butter for me and don't really like it) and as for the strawberry cream, I usually make this when I need a healthy snack but I add greek yogurt instead of almond milk.       Thanks for the comment! :) I try to reduce my dairy intake, therefore, decided to go for the almond milk. Greek yogurt is supa tasty <3
